Evil genius pie

I’m a bad blogger – I did not take any pictures of our dinner tonight, but am posting the recipe bc it was surprisingly delicious. It was prompted by a compromise w my son [I was going to make chicken pot pie and he wanted apple pie] and formulated by a mashup of a few different recipes. All measurements are super-estimated, bc I made it up w whatever I had.

Chicken apple curry pie

Melt 3 Tbs butter over medium-high heat. Saute 2 sm Gala apples [chopped or maybe diced?], 1/4 c onion [I used frozen but prob prefer fresh chopped], and 1 c. frozen spinach [thawed and drained would be a good idea, but mine was still frozen...]. Coat w 1 Tbs of sugar [I might leave this out next time - I was trying to make it more palatable to my picky 4yo] and 1 Tbs curry powder. Stir in 2c shredded rotisserie [or otherwise cooked] chicken, 1/2 c [maybe? have no concept on the measurement of this one] apple juice, 2 eggs [prob should've whisked them first], and 1 c shredded cheddar. Pour into a pie pan [or 8x8 baking dish?]. Top w unrolled prepared pie crust [I used store bought, but hey, make your own if you're so inclined]. Bake at 375 for 45 min or until pie is set and crust is browned. Cool slightly and eat.

Five minute miracle

I found a few different recipes for this online – it needs some adjustments, which I will try to make as I taste-test them. =)

Five Minute Chocolate Mug Cake

Use a large microwave-safe mug. Add in 4 Tbs. flour, 4 Tbs. sugar, and 2 Tbs. cocoa powder. Mix. Add 3 Tbs. half-and-half [or milk] and 3 Tbs. oil [or butter]. Most recipes say to whisk in one egg, but I omitted it in favor of a fudgier flavor. Splash in some vanilla or almond or coconut extract. You can also add 3 Tbs. of chocolate chips or other stir-in fun. Mix well. Microwave for three minutes [I suggest not watching it - many reports say that the cake puffs up over the edge of the mug and settles back down afterward - that would make me nervous]. Let cool [or don't...]. Dig in!
